Have you bought a box of baking mix lately? Expensive isn’t it? I love the convenience and all of the things that you can do with it, but I sure don’t love the price. On my quest to creating simple, budget friendly recipes I decided to do a little experimenting to see if I could come up with a homemade version that didn’t break the bank. I’m happy to report that I did and not only is it a lot cheaper, but it works just as well and tastes so much better.

When I’m making up a batch of the baking mix, I usually double the recipe because I use so much of it. When I first created the mix I only used it for making biscuits, but with some experimenting over the years the list of uses has grown, that’s why I double it now. I use it for making pancakes, cakes, cookies, crusts, the list goes on and on. The best part about this mix is how easy it is to use and with a few added ingredients you can transform it into a number of different things.

So smart! My children reminded me just last week about when I used to keep homemade pancake mix ready in my pantry. I need to start again, and add this recipe too!
