HOW TO MAKE HOMEMADE TOMATO SOUP

Start by heating butter in a 4-quart saucepan over medium heat. Once the butter is melted, add a can of tomatoes, chicken stock, and onion. Allow the mixture to come to a simmer, then let it cook uncovered for 25 minutes, stirring occasionally. Once the soup is done cooking, blend it until smooth and then stir in some rich heavy whipping cream. Finally, add salt to taste and enjoy your flavorful tomato soup.

ALTERNATIVE COOKING METHODS

Slow Cooker -Add butter, onion, tomatoes, and chicken stock to your slow cooker. Let it cook for 6-8 hours on low or 3-4 hours on high. For a smooth texture, use an immersion blender to puree the soup. Stir in the heavy cream for a creamy finish. Don’t forget to season with salt to taste.

Instant Pot – Add the butter, onion, tomatoes, and chicken stock to your Instant Pot and lock the lid in place. Select High Pressure and set a cook time of 5 minutes. Once the time elapses, allow the pressure to release naturally for 5 minutes before doing a Quick Pressure Release. Carefully remove the lid and puree the mixture until it’s smooth. To finish, select Sauté and stir in heavy cream until everything is heated through. Lastly, add salt to taste.

WHAT IS THE BEST WAY TO STORE LEFTOVER TOMATO SOUP

Refrigerate – You can store your delicious homemade tomato soup in the fridge for 2-3 days. Just make sure to let it cool down to room temperature before putting it in an airtight container.

Freeze – Once your soup has cooled down, transfer it to a freezer-safe container and pop it in the freezer. Tomato soup can last up to six months in the freezer.
