Old Fashioned Banana Nut Bread Recipe

It's comfort food at it's best, moist, warm and bursting with banana flavor.I’ve tried many different banana breads and I always come back to grandma’s recipe, it’s by far the best. I think it has something to do with her secret ingredient, the liquid that remains when you thaw the bananas. That liquid, which usually gets thrown out, is amazing stuff, it has so much flavor and really helps make the bread incredibly moist. 

Ingredients Needed:

1/3 cup coconut oil (melted) or vegetable oil
1/2 cup sugar
2 eggs
3 bananas, mashed
1/4 cup banana juice or water
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 3/4 cup flour
1 teaspoon baking soda
1/2 walnuts, chopped (optional)

Banana Nut Bread Recipe

Step 1: Preheat oven to 325°F. Spray a 9×5 loaf pan with cooking spray.

Step 2: You can use ripe bananas for this recipe, but if you want a really moist, bursting with flavor, banana nut bread, use frozen bananas that have been thawed. The liquid that they create when thawing out is what will give the bread a ton of flavor.

Step 3: Using a fork, mash the bananas until there are only a few small chunks.

Step 4: In a large bowl, whisk together the oil and sugar. Once the oil and sugar are combined stir in the eggs.

Step 5: Whisk in the mashed bananas and banana juice.

Step 6: Stir in the vanilla and cinnamon.

Step 7: Stir in flour, salt and baking soda.

Step 8: Fold in walnuts and pour into loaf pan. Bake 55-60 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes in pan. After 10 minutes remove from pan and cool on rack for 20 minutes.
