Old Fashioned Banana Nut Bread

All time family favorite, Banana Nut Bread. Not just any banana nut bread though, it's grandma's old fashioned Banana Nut Bread. It's comfort food at it's best, moist, warm and bursting with banana flavor.

Ingredients

  • 1/3 cup coconut oil melted or vegetable oil
  • 1/2 cup sugar
  • 2 eggs
  • 3 bananas mashed
  • 1/4 cup banana juice or water
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 walnuts chopped (optional)

Instructions

  • Preheat oven to 325°F. Spray a 9x5 loaf pan with cooking spray.
  • Using a fork, mash the bananas until there are only a few small chunks.
  • In a large bowl, whisk together the oil and sugar. Once the oil and sugar are combined stir in the eggs.
  • Whisk in the mashed bananas and banana juice.
  • Stir in the vanilla and cinnamon.
  • Stir in flour, salt and baking soda.
  • Fold in walnuts and pour into loaf pan. Bake 55-60 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes in pan. After 10 minutes remove from pan and cool on rack for 20 minutes.
