French Toast Pockets Recipe– healthy, crispy, air fryer, toasted pockets filled with a variety of delicious fillings. A simple breakfast or snack recipe that can be eaten on the run or served at a formal brunch.
One of the first things that I ever made in my air fryer was… can you guess? French fries, I think that is one of the first things that everyone makes when they first get their air fryer. Since that first basket of fries I have discovered that it can do so much more.
One of my families favorite air fryer recipes are these french toast pockets. I’ve actually been making them for years except they were fried in a vat of oil, maybe not a vat, but a lot of oil. When I first tried them in the air fryer I was a little concerned about not using oil. Oil adds a very unique flavor to fried foods and I was afraid I was going to lose that flavor. Surprisingly, that wasn’t the case.
With just a few squirts of cooking spray, and a preheated air fryer, I was able to recreate the flavor of one of my families favorite fried dishes. The only difference is that they are healthier than they used to be.
French Toast Pockets
Bread: I use really soft white bread for this recipe. The softer the bread, the better it seems to seal, leaving less of a chance for the filling to seep out. Also it it seems to toast up better than a heavy wheat bread.
Filling: You can fill them with just about anything that you like. My families favorite is raspberry and cream cheese which taste a lot like a raspberry cheese danish.
Coating: Just like french toast the sealed bread is dipped into a egg and milk. The trick to minimizing the mess is to allow as much of the mixture to fall away from the bread before placing in the air fryer. Be sure that you spray the air fryer basket with cooking spray, if you don’t your french toast pockets will stick.
How to make French Toast Pockets in the Air Fryer
Step 1: Place a tablespoon of raspberry jam in the center of a piece of bread and a tablespoon of cream cheese in the center of another piece. Spread the jam and cream cheese, but not all the way to the edges.
Step 2: Place the jam and cream cheese slices together and seal using a sandwich sealer. *The sandwich sealer will remove the crusts while sealing the bread together.
Step 3: In a shallow dish, whisk together the egg and milk.
Step 4: Preheat air fryer to 380°F for 2 minutes.
Step 5: Spray air fryer basket with cooking spray. Dip sealed sandwich into egg mixture, place in air fryer and cook 5 minutes at 380°F, flip sandwich over and cook for an additional 2 minutes.

Serving Suggestions
Freeze up a batch to be served for a breakfast on the run or as an after school snack for the kids. They’re also great to serve for brunch along with some bacon or sausage and some fresh fruit.
Storage Instructions
To freeze – cool pockets to room temperature, place on a parchment lined baking sheet and place in freezer for 1-2 hours. Remove from freezer and place in an air-tight container or freezer bag, return to freezer. Freeze up to 3 months.
Reheating Instructions
◾ Microwave – reheat on high for 1 1/2 – 2 minutes.
◾ Oven – preheat oven to 400°F, place frozen pockets on a baking sheet, bake at 5 minutes per side.

Ingredients

Tips
✔ To soften bread for easy sealing, place in microwave for 10-15 seconds.
✔ To seal the slices of bread together, use the edge of a cutting board, press it against the edges of the bread and applying pressure. *Remove the crust before sealing.
✔ Another way to seal the bread together is using the tines of a fork. *Remove the crust before sealing
✔ Freeze the crusts in a plastic freezer bag.When you have enough, toast them in the oven, then run them through the food processor to make delicious homemade bread crumbs
