Cold fried chicken makes the most satisfying chicken salad. For a simple and fun summer meal, mix the fried chicken with a creamy dressing, a few crunchies, a little heat and spread it between two waffles. Your family will love it and you’ll love how simple it is.
Who likes spending time in the kitchen on a beautiful summer day? Personally, I do everything in my power to avoid the kitchen. My summer menu consists of a lot of grilling, cooking in big batches, cold salads (a lot of cold salads) and super simple recipes. I love cooking, but when summer rolls around I want to be enjoying the outdoors not a slave to the stove.
This fried chicken salad, is one of our summertime favorites. It’s simple, especially when you buy the chicken already fried (this is another trick to avoiding the kitchen). The salad can be served on a bed of lettuce, wrapped in a tortilla, on a couple pieces of bread, but our favorite is between to waffles. We like our chicken salad crunchy and the waffles not only taste good with it but they add a little more crunch.
Ingredients You’ll Need:
1/2 cup mayonnaise
3 tablespoons milk
3 tablespoons whole grain mustard
1/2 teaspoon Italian seasoning
1/8 teaspoon tobasco sauce
salt & pepper
2 cups of chicken
2 stalks celery
2 green onions
parsley, fresh
8 waffles
Tools You’ll Need:
Mixing Bowl
Measuring Cups & Spoons
Rubber Spatula
Liquid measuring cup
Chef’s Knife
Cutting Board
Toaster Oven
Fried Chicken Salad & Waffle Sandwiches
Step 1: In a large bowl, mix together the mayonnaise, milk, mustard, Italian seasoning, salt & pepper and hot sauce. *The whole grain mustard helps add a subtle layer of crunch to the salad.
Step 2: Remove the bones and cut the chicken into cubes. The crispy fried skin from the chicken adds another layer of crunch to the salad.
Step 3: Add the chicken to the dressing. Stir until the chicken is completely coated.
Step 4: Toss the chicken mixture with the onions, celery and parsley (another layer of crunch). Spread chicken salad between two toasted waffles for a final layer of crunch.
