It’s actually considered a berry! I was lucky enough to grow up surround by these wonderful fruit trees, which meant we had them at almost every meal. You’d think by now I’d be sick of them, but they are still my favorite.

When you start thinking of them as a fruit instead of a vegetable you can come up with so many more ways to use them. My mom used to replace the butter with avocados when she did her baking. She also made the most delicious smoothies with ripe avocados. However, to this day my favorite is guacamole, there’s just something about the sweetness of the avocado mixed with those savory spices.

I also love guacamole and your recipe is a lot like mine! 🙂 Avocados are actually a pretty new thing for me as my family did not have them when I was growing up, and even after I was married I didn’t known much about them. Now that I’ve discovered them I love them! I might try your mom’s idea of using them in place of butter sometimes. After all they are one of the good fats. 🙂 Blessings to you! Did you know that avocados are also referred to as poor man’s butter? I think that’s how my mom came up with the idea of using them to replace butter in a lot of her recipes. She was cooking healthy, before cooking healthy was cool.
