This is a meal that my mom made when we were growing up. The only difference is she served it with a box of mac ‘n’ cheese and some green beans. Growing up, money was tight, but my mom always had a way of making inexpensive meals feel special. Her knack for creating delicious dinners on a budget inspired me to be frugal even when I didn’t have to be.

To this day, salmon patties are one of my favorite meals. They taste amazing and bring back so many happy memories. Does that make this a comfort food? Maybe. But it’s also a quick, healthy, and budget-friendly meal that busy families can enjoy without breaking the bank.

How to Make a Delicious Salmon Patty Budget Meal

Creating this delicious salmon patty dinner is as easy as preparing the patties, cooking the rice, and roasting the broccoli. Follow these simple steps to put together a quick, healthy, and budget-friendly family meal.

Salmon Patties

  1. Break Up the Salmon – In a mixing bowl, break up the canned salmon so that there are no large chunks. This will help the patties hold together.
  2. Combine Ingredients – Add the egg, brown mustard, chopped onion, and the bread crumbs to the salmon. Gently stir everything together until all the ingredients are combined. This ensures that every bite will be evenly flavored.
  3. Form the Patties – Divide the mixture into 4 equal parts. Use your hands and gently press each part into a patty shape. Make sure they are all the same size so they cook evenly.
  4. Heat the Oil – Add vegetable oil into a skillet and heat it over medium heat. The oil sizzle when the patties are added but not so hot that it smokes.
  5. Cook the Patties – Add the patties to the skillet and cook for 3-4 minutes per side, they should be golden brown and crispy. Carefully flip them over to keep them from breaking apart. Once they are cooked, remove them from the skillet and set them aside to slightly cool before serving.

Seasoned Rice

  1. Cook the Rice – Follow the package directions for cooking the rice. Before the water starts to boil, add the chicken bouillon. This will give the rice extra flavor as it cooks.
  2. Add the Parsley – When the rice is done cooking, stir in the fresh parsley. This adds a nice fresh flavor to the rice.
  3. Let it Rest – Allow the rice to sit for 5, then fluff with a fork before serving. This resting period helps the flavors intensify and allows the rice to reach the perfect texture.

Roasted Broccoli

  1. Preheat the Oven – Set the oven to 425°F, let it preheat while you prepare the broccoli.
  2. Prepare the Broccoli – Place the broccoli florets in a large bowl. Drizzle them with 1olive oil. Then season with salt and pepper. Toss until the broccoli is evenly coated with the oil and seasonings.
  3. Roast the Broccoli – Spread the broccoli in an even layer on the lined baking sheet. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the broccoli is tender and slightly crispy. Check occasionally to avoid burning.

What can I add to salmon so it doesn’t taste fishy?

To reduce the fishy taste of your salmon, you can use a number of different ingredients that will help to neutralize or compliment the flavor. Citrus juices like lemon or lime, and fresh herbs like dill or parsley work well at masking the fishiness while adding delicious flavors. Also, marinades made from soy sauce, ginger, garlic, honey, or even mustard help neutralize the flavor. Don’t forget the spices, like paprika, cumin, coriander, and black pepper they are an amazing addition and really help lessen that fishy flavor.

Another trick to neutralize the fishy odor is soaking the salmon in yogurt or buttermilk, a light splash of vinegar can also help. Try different cooking methods like grilling or broiling, this will give the fish a bit of a smoky flavor and help to mask any fishiness. These techniques can really boost the flavor of your salmon and make it more enjoyable.
