In a large mixing bowl, crack open your eggs and add milk, a pinch of salt, and some pepper. Whisk it all together until it’s thoroughly mixed. This egg mix is the base of your frittata.
  2. Cook the Filling: If you’re adding meat to your frittata, cook this first. Grab a 12 to 15-inch cast iron skillet – it’s perfect because it can go from stovetop to oven later. Cook the meat over medium heat until it’s just starting to brown, then take it out of the pan and put it aside. Next, it’s vegetable time. Using the same pan, because we love flavor and hate extra dishes, sauté your veggies until they’re soft but not mushy. Once they’re just right, add the cooked meat back in and mix in any herbs or spices you like for extra taste.
  3. Add the Egg Mixture: Now, pour the whisked egg mixture over your cooked fillings in the skillet. Do this gently to make sure it spreads evenly throughout the meat and vegetables. A little shake of the pan helps settle everything into place.
  4. Sprinkle Cheese: It’s cheese time! Take your grated cheese and sprinkle it all over the top of the egg mixture. Then, turn down the heat to medium-low. You’re watching for the sides of the frittata to firm up while keeping the center a bit soft and runny. This should take around 5 minutes. The cheese will start melting and make everything look and smell amazing.
  5. Finish Cooking: Carefully move the whole skillet from the stove into your preheated oven. Now, the oven takes over. Bake it for about 10-15 minutes. You’re looking for the eggs to fully set, meaning they’re cooked all through, and the top to turn a lovely golden brown. This is when you know your frittata is done to perfection.

How to tell when a frittata is done?

Knowing when a frittata is done is pretty simple! When the edges start to look firm and the middle seems just a bit jiggly, it’s almost ready. You don’t want the middle to be runny, but if you wait until it’s completely firm in the center, you might overcook it. A good trick is to gently poke the center with a fork or toothpick. If it comes out clean, your frittata is done. Another sign is the color; it should be a nice golden brown on top, not too pale and definitely not burnt. Remember, even after you take it out of the oven or off the stove, it will keep cooking a little because of the heat. Giving it a few minutes to rest before slicing also helps the frittata set perfectly, making sure every slice comes out just right.

      Yes, make sure to that it is completely cooled, then wrap it in plastic wrap and place it in an air-tight container. It wll keep for up to 3-4 months.
