Ingredients

  • 8 lg eggs
  • ¼ cup milk
  • salt and pepper to taste
  • 1 cup cooked meat (e.g., ham, sausage, bacon)
  • 2 cups chopped vegetables (e.g., onion, spinach, mushroom, bell peppers)
  • 1 cup shredded cheese (e.g., cheddar, mozzarella, feta)
  • herbs and spices (e.g., garlic, basil,) to taste

Instructions

  • Preparation: Preheat oven to 375°F. In a large bowl, whisk together eggs, milk, salt, and pepper until well mixed. This is your frittata base.
  • Cook the Filling: In a 12-inch cast iron skillet, cook meat over medium heat until beginning to brown; remove and set aside. In the same skillet, sauté vegetables until soft but not mushy. Return cooked meat to the pan, add herbs or spices, and stir to combine.
  • Add the Egg Mixture: Gently pour the egg mixture over the fillings in the skillet. Shake the pan slightly to ensure an even spread and settle the mixture.
  • Sprinkle Cheese: Sprinkle grated cheese evenly over the egg mixture. Reduce heat to medium-low and cook until edges firm up but center remains slightly soft, about 5 minutes, allowing cheese to melt.
  • Finsih Cooking: Transfer skillet to preheated oven and bake for 10-15 minutes, until eggs are set and top is golden brown.
