15 Minute Shrimp & Asparagus Pasta

A busy mom’s dream is a yummy meal that can be served in minutes. This simple shrimp and asparagus pasta recipe is just that, easy, delicious, and can be on the table in as little as 15-minutes.

Things get pretty busy around here during the week and while slow cooker meals are a big help, you can only eat so many of them.

When I’m doing my weekly meal planning our busy schedules play a big part in the process.  Those busy nights need meals that can be on the table quickly, so a collection of 15-minute meals is a must.

One of my families favorite 15-minute meals, is this simple Shrimp & Asparagus Pasta. It’s surprisingly quick to make and super delicious. The garlic butter sauce, with the addition of the Parmesan, is what gives this dish such amazing flavor. The trick to getting this yummy dish on the table in less than 15 minutes, is by using angel hair pasta, which cooks up fast, and using shrimp that has already been cooked. 

INGREDIENTS YOU’LL NEED

▪ Pasta: Angel hair pasta is best for this dish; it cooks quickly and easily absorbs the delicate flavor of the garlic butter sauce. 
▪ Butter: Unsalted butter is recommended.
▪ Garlic: The more the better, I like to use 4-5 cloves.
▪ Peppers: You can use bell peppers, but I like to use sweet peppers. Red, orange and yellow sweet peppers have a more mild flavor and they add beautiful color to the dish.
▪ Asparagus: Asparagus is a spring vegetable, so the flavor and price in will be best in early spring. Frozen is a good substitute during the off season.
▪ Shrimp: I like to use large shrimp for this recipe, you get about 31-35 shrimp per pound.
▪ Cheese: Parmesan cheese, finely grated adds a really nice flavor to the dish. Parmigiano-Reggiano or other grated hard cheese can be used also.

HOW TO MAKE SHRIMP & ASPARAGUS PASTA

Step 1: Prepare the Pasta
Cook pasta according to package directions. While the pasta is cooking, melt butter in large skillet over medium heat.

Step 2: Season the Butter
Once the butter is melted stir in the minced garlic, cook it for about 30 seconds to a minute. This will release the fragrance of the garlic for the butter sauce.

Step 3: Sauté the Veggies
Over medium heat, add the onions, sweet peppers and the asparagus to the garlic butter sauce; cover and cook for 5 minutes, stirring occasionally.  The asparagus will be slightly tender after 5 minutes, if you prefer your asparagus well done, cook for an additional 5-10 minutes.

Step 4: Heat the Shrimp
Add the cooked shrimp to the pan, and cook for about 2-3 minutes.

Step 5: Add the Pasta
Toss the pasta in with the buttered vegetables, continue tossing until completely coated with the butter sauce. Sprinkle with Parmesan cheese and toss again.

STORAGE & REHEATING TIPS

Refrigerate: Place cooked pasta in an airtight container and refrigerate up to 5 days.

Freeze: Place cooked pasta in a large freezer bag. Remove as much air as possible and freeze for up to 3 months.

Reheat: Place pasta in an oven-safe dish, sprinkle with a little water, cover with aluminum foil and bake for 20 minutes at 350°F.

Ingredients

  • 12 ounces angel hair pasta
  • 1 1/2 sticks butter
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 2 cups sweet peppers diced
  • 15 spears asparagus diced
  • 1 pound cooked shrimp large (31/35)
  • 1 cup parmesan cheese shredded

COOKING TIPS AND RECIPE VARIATIONS

▪ The angel hair pasta can be substituted with spaghetti noodles, fettuccine, linguine, or vermicelli.
▪ Unsalted butter can be substituted with salt butter.
▪ Don’t heat the cooked shrimp for more than a couple of minutes. Overcooking will cause the shrimp to be tough. 
▪ If you use raw shrimp, cook for about 4-6 minutes, this is how long it will take to cook before it becomes tough.
