There’s always that one classic recipe that everyone needs to learn how to make. That one dish or dessert item that everyone never gets tired of!
For me, it’s chocolate chip cookies—a simple, classic dessert that both I and the kids absolutely love! Everyone has their own versions of this one—thick, think, soft, chewy—there is really no single way on how to make it.
In this article, I’m going to show you my version! Below is the recipe that I have been using for a long time now. This one has almonds, but you can use any type of nut you like (you can also skip it, too if nuts aren’t your thing). Good luck!
• 3/4 cup unsalted butter
• 1/4 cup + 3 tablespoons sugar
• 1/4 cup + 2 tablespoons brown sugar
• 2 egg yolks, cold
• 2 teaspoons vanilla extract
• 2 cups + 4 tablespoons all-purpose flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup chocolate chips
• 1/4 cup almonds, sliced (optional)
1. Prepare Butter Mixture
Place the unsalted butter in a bowl. Melt it, then let cool to solidify a bit.
Add sugar and brown sugar to the bowl of butter. Use an electric mixer or food processor to beat butter and sugar until fluffy, add in egg yolks and vanilla, and mix well. Set aside.
2. Prepare Flour Mixture
In another bowl, sift flour, baking soda (here’s its difference with baking powder), and salt, then mix with a whisk.
Divide the flour mixture into two portions, then add each portion to the mixture of butter and eggs then mix with a spatula before adding the remaining flour.
Finally, add chocolate chips and sliced almonds to the mixture, mix until well-combined.
When you have all ingredients ready, preheat the oven at 375°F for 10 minutes
3. Prepare For Baking
Line a baking sheet with parchment paper.
Take about 2 tablespoons of cookie dough, shape into a ball, then put on a baking sheet. Continue with the rest of the dough.
Lightly press the cookie balls to flatten them a little bit.
- You should leave about 1-1/2 inch space between two pieces of dough in order to give your cookies enough space. The dough will later spread, and your cookies will get bigger after baking.
- If the dough is too wet to be shaped, simply put it in the fridge for about 30 minutes until it gets firmer.
Bake the cookies at 375°F for about 12 minutes. When the cookies get slightly golden, rotate the baking sheet and continue baking for 3~5 more minutes until the edges turn golden brown.
I use a counter top convection oven, but any type of oven will do for this, as long as it can bake at 375°F.
Take them out and let them cool on baking sheet for 5 minutes before transferring to a rack.
- I strongly suggest that you stay with your cookies while they’re baking since you can check every once in a while.
- If you want the cookies crispy inside out, put all your cookies on the rack and bake at 230 °F for ten more minutes.
5. Serve And Store.
You should store your cookies in air-tight bags or containers and serve in 1-2 weeks for the best taste.
