Are you ready for some football? #MakeGameTimeSaucy with two easy and yummy Mexican tailgating recipes.
I love me some football! And, I love having a reason to bring family and friends together. A big TV, a great football game, a few decorations and lots and lots of food, that’s what I call a good time!
Living in a state that doesn’t host a national football team can make decorating a little more challenging. Between all of our family and friends, I bet that we have a fan for each team. So, out of respect, I only pull out our teams decorations when they are playing. Hopefully I’ll be pulling them out a lot this year!
To avoid showing favoritism for any one team (except mine, of course) I decided to make our homegating parties themed around food. Being a Southern California girl, a Mexican themed party seemed like a great way to kick off the football season.
So I headed off to my local Walmart…..
As I was strolling through the Mexican isle at Walmart I spotted the Pace® Salsa and was hit with some foodie inspiration. Two delicious ideas that would be perfect for this years first, football homegating party.
I couldn’t decide which one of the recipes I wanted to share with you first because they were both so good and super easy, the 3-Bean Mexican Salad or the Chorizo Cheese Ball, I decided, what the heck, I’ll share them both.
3-Bean Mexican Salad (easy!!!)
As far as easy recipes go, this is pretty much as easy as it gets!
Open the cans of beans and corn, drain and rinse with cold water. Normally this is the easiest part of the recipe, that is if your can opener doesn’t decide to die before your done, like mine did.
Pour the rinsed beans and corn into a medium sized bowl and mix together.
Chop up the onions and cilantro and add it to the bowl of beans. Give the beans a good stir so that everything is evenly mixed together.
Stir in some Pace® Chunky Salsa to add some genuine southwest flavor. Refrigerate one hour before serving.
3-Bean Mexican Salad
Ingredients
- 15 ounce can black beans drained & rinsed
- 15 ounce can pinto beans drained & rinsed
- 15 ounce can kidney beans drained & rinsed
- 15 ounce can corn drained
- 1/4 cup cilantro chopped
- 1/2 cup red onion chopped
- 2 cups Pace® Chunky Salsa
Instructions
- Drain beans and corn, rinse with cold water. Mix beans and corn together in a medium sized bowl.
- Add onions and cilantro to the beans and mix well.
- Stir in Pace®[Chunky Salsa and refrigerate for at least an hour before serving.
Chorizo Cheese Ball (easy!!!)
Easy recipes are the best when your making a lot of different dishes.
Cook the chorizo until it starts to crumble, about 4-5 minutes. There will be a lot of grease, so drain on a paper towel and pat to remove as much grease as possible. Refrigerate until your ready to use it.
*Chorizo is a Spanish pork sausage which can be found with the Mexican cheeses at Walmart.
With a mixer, whip the softened cream cheese, until it’s light and fluffy.
Add the cheddar cheese and the chilled chorizo to the whipped cream cheese. Using a rubber spatula, gently mix together.
Form the mixture into a ball, cover with plastic wrap and refrigerate for at least 2 hours. After 2 hours, remove from refrigerator and scoop out the center with a small spoon. To add some kick, fill with Pace® Picante (hot). Serve with tortilla chips.
Chorizo Cheese Ball
Ingredients
- 8 ounces chorizo
- 2 8 ounce packages cream cheese, softened
- 2 cups sharp cheddar cheese
- Pace® Picante
- tortilla chips
Instructions
- Cook chorizo until it starts to crumble, about 4-5 minutes. Drain on a paper towel and pat to remove as much grease as possible. Refrigerate until your ready to use it.
- Using a mixer, whip the softened cream cheese, until it's light and fluffy.
- Add the cheddar cheese and the chilled chorizo to the whipped cream cheese. Using a rubber spatula, gently mix together.
- Form the mixture into a ball, cover with plastic wrap and refrigerate for at least 2 hours.
- remove from refrigerator and scoop out the center with a small spoon. Fill with Pace® Picante (hot). Serve with tortilla chips.
