I like to keep my freezer stocked with several different types of meat. When a particular type or cut goes on sale at the lowest price point, I usually snag enough to last a few months. If you track sale cycles then you know when it’s time to stock up. Luckily, pork tenderloin went on sale at Kroger’s for $1.99/pound (reg $3.99/lb) last week, I was running pretty low on pork and really needed to stock up.
I purchased 32 pounds, they came in 5-6 pound packages and I had the butcher cut some of it into chops and some into smaller roasts. This should be enough to last our family until the next sale.
Grilled Southwestern Pork Chops w/pepper & rice
Serves: 4

1 cup white rice, dry ·
4 pork chops, 1/2 inch thick (about 1 pound) ·
1½ teaspoons chili powder ·
½ teaspoon ground cumin ·
¼ teaspoon cayenne pepper ·
¼ teaspoon salt ·
1 clove garlic, minced ·
2 cups sweet peppers, sliced ·
1 medium sweet onion, sliced ·
2 teaspoons olive oil ·
Salt and pepper, to taste ·
Salsa (optional) Instructions

Cook according to package directions. 2.
In a small bowl, mix together the chili powder, cumin, cayenne pepper garlic and salt. Rub the mixture on both sides of chops. Set aside. 3.
Heat oil in a large saute` pan over medium-high heat. Add peppers and onions; cook until the onions are tender, stirring often. Salt and pepper to taste. 4.
On the grill or in a grill pan cook the chops for about 8-10 minutes, until no longer pink. Serve
