Easy Chicken Florentine Medallions (Feed 4 for $5.27)

Chicken Florentine Medallions. My kids aren’t fond of spinach, but when it’s served like this they always ask for seconds. This is a surprisingly easy meal to make and the kids will have so much fun pounding out the chicken breasts for you. If you pair the chicken with some frozen or canned vegetables instead of the acorn squash you could have it on the table in less than 30 minutes.

My kids aren’t fond of spinach, but when it’s served like this they always ask for seconds. This is definitely in keeping with our cheap recipes theme, however once you’ve tried it you would never guess that it was.
Menu – Serves 4
Brown Rice
Acorn Squash
Preheat oven to 400°

acorn squash
1 hour before serving:
Cut squash in half, lengthwise and remove seeds. Place both halves in a baking dish, cut side down. Fill with 1-inch of water and bake on the middle rack in oven.
1 ½ lb.
chicken breast
salt & pepper
30 minutes before serving:
With a meat tenderizer, pound the chicken until it’s thin. Season both sides a lay flat on a baking sheet.
1 ½ – 2 c
½ cup
fresh spinach
mozzarella cheese, shredded
Layer the spinach and cheese on top of the chicken. Tightly roll the toppings inside the chicken. Place on the baking sheet, seam side down. Bake for 20-25 minutes.
2/3 cup
brown rice, dry
Prepare according to package directions.
2 tbsp
1 tbsp
butter
brown sugar, packed
Scoop the squash out of the rinds and place in a bowl. Top with butter and sprinkle with brown sugar.
Remove the chicken from the oven and let it sit for 5 minutes before slicing.
