This Feed 4 for 5 meal is a tribute to my father-in-law who was born and raised in West Virginia and loved, loved. loved a hearty breakfast.
Being a California girl, I was raised on a bowl of fruit or a smoothie for breakfast. Of course we did occasionally eat some eggs and toast and a waffle or two here and there, but rarely did we eat this heartily in the morning.
I still don’t care for a heavy breakfast, I feel like it slows me down, but dinner, that’s another story. Bring on the starches!
I don’t think I’ve ever met anyone who didn’t like potatoes, especially fried.
And biscuits, who can resist reaching for seconds.
Smother it all in gravy and you have a meal that any southerner would be proud of.
To give the meal somewhat of a healthy balance there has to be a protein and either a fruit or vegetable. Adding the eggs and apples does that.
*If you’re not a gravy lover try putting the apples on the biscuit instead, The apples are especially good on a biscuit if you fry them in a little butter, cinnamon and sugar first.
After this meal I don’t think anyone will be walking away saying that they’re hungry.
Pork
4 medium potatoes, peeled and cubed ($0.28)
¼ cup vegetable oil ($0.10)
8 BakeQuick Biscuits ($0.36)
1 pound pork sausage ($2.19)
2 tablespoons flour ($0.01)
1 cup milk ($0.12)
Salt and pepper
2 tablespoons butter ($0.10)
8 large eggs ($0.72)
¼ cup cheddar cheese, grated ($0.38)
2 Granny Smith apples, peeled, cored and sliced ($0.66)
In a large skillet, heat vegetable oil. Add potatoes and fry
until brown and crispy.
Prepare BakeQuick biscuits according to directions.
In a large skillet, over medium heat, cook sausage until
crumbled and brown.
Remove half of the sausage and place on paper towel to drain.
Add flour to the pan with the remaining sausage, cook until it
is dissolved, about 1-2 minutes.
Stir in milk and whisk often, until the gravy is thick and
bubbling. Add salt and pepper to taste.
Scramble eggs in butter. Stir in reserved sausage and cheese.
Serve eggs with biscuits and gravy, potatoes and apples slices.

- Vegetable Oil – (48 ounces for $2.39) purchased from a discount grocery store (Aldi’s).
- BakeQuick Biscuits – made from a homemade mix (follow link for directions).
- Pork Sausage – (16 ounces for $2.19) purchased from a discount grocery store (Save-A-Lot).
- Flour – (5 pounds for $1.19) purchased on sale from a discount grocery store (Aldi’s). Buying in larger quantities will lower the cost even more.
- Milk – (1 gallon for $1.99) purchased on sale from a discount grocery store (Aldi’s). Milk can be frozen, so when you find a really good price, stock up. I don’t suggest using frozen milk for drinking but it’s great for cooking.
- Butter – (1 pound for $1.69) purchased on sale from a discount grocery store (Aldi’s). Butter can be frozen for up to 6 months when kept in the original packaging and placed in freezer bags.
- Eggs – (30 count for $2.59) purchased on sale from a discount grocery store (Save-A-Lot). Eggs can be frozen for up to a year when cracked open and place in either freezer bags or air-tight containers.
- Cheese – (8 ounces for $1.50) purchased on sale from a local grocery store chain (Fas-Chek). 1 ounce of shredded cheese equals about 1/4 cup.
- Apples – (1 pound for $0.99) purchased on sale from a grocery store chain (Kroger). One pound yields about 3 medium sized apples.
Savings Tip:
Prices of food items change often. To keep an accurate price log, track the prices of the main items that you purchase every few months.
