Roasted Asparagus w/Parmesan & Lemon

Ingredients
- 2 lb asparagus spears fresh, trimmed
- 4 tbsp olive oil
- salt & pepper to taste
- 4 tbsp Parmesan cheese grated (optional)
- 1 lemon for zest and juice
- 2-4 cloves garlic minced (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Prepare the asparagus: Rinse the asparagus under cold water, pat dry, and trim the woody ends (about 1–2 inches from the bottom).
- Season: Place the asparagus on a baking sheet. Drizzle with olive oil, then sprinkle with salt, pepper, and minced garlic (if using). Toss to coat evenly.
- Roast: Spread the asparagus in a single layer and roast in the preheated oven for 10–15 minutes, or until the asparagus is tender and lightly browned.
- Add toppings: Remove from the oven, sprinkle with Parmesan cheese, lemon zest, and a squeeze of lemon juice.
