Easy Potato Salad

Ingredients
- 4 medium potatoes, cut into ¾" pieces
- ¾ cup mayonnaise
- 1 tablespoon yellow mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ onion, diced
- 1 stalk celery, diced
- 3 hard boiled eggs, chopped
- paprika
Instructions
- In a large pot, add potatoes and enough water to cover. Over medium-high heat, bring to a boil, reduce heat and simmer until potatoes are tender, about 10 minutes. Drain and transfer to a large mixing bowl and allow to completely cool.
- In a small mixing bowl, whisk together mayonnaise, mustard, garlic powder. salt and pepper.
- To the cooled bowl of potatoes, stir in the mayonnaise dressing. Fold in onion, celery and eggs.
- Garnish with paprika
