Pink Lemonade Cookies are as simple to make as they are delicious and they make the best summertime treat. If you like lemons, you’re definitely going to love these cookies. They are sweet little burst of sunshine that melt in your mouth and leave you wanting more. Anyone who has ever taken a bite out of a lemon knows how well it wets your mouth. These little gems do the same thing but they won’t make you pucker.
Pink Lemonade Cookies
Lemon Flavor: Surprise it’s not from lemons, it’s from pink lemonade Kool-aid. Those tiny little packets pack a whole lot of lemon flavor, which makes them perfect for this recipe. If you want, you could use the regular lemonade packets, they basically taste the same, I just like to use the pink lemonade because it adds a nice color to the cookie dough.
Flour: I don’t normally sift my flour, I usually just give it a couple of good stirs with a whisk to fluff it up. With this recipe I definitely sift the flour, it makes a big difference. I found that when I don’t sift the flour the cookies don’t melt in your mouth as they should and the melting is one of the things that makes these cookies amazing.

Pink Lemonade Cookies
Ingredients
Cookies
- 1 1/2 cups all-purpose flour sifted
- 2 tablespoons cornstarch
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 package unsweetened Kool-aid pink lemonade
- 10 tablespoons butter softened
- 1/2 cup sugar
- 1/4 cup powdered sugar
- 1 large egg yolk
Topping
- 1 1/2 cup powder sugar sifted
- 1 package unsweetened Kool-aid pink lemonade
Instructions
- In a medium bowl combine flour, cornstarch, baking powder, baking soda, salt and one package of Kool-aid. Set aside.
- In a large bowl, beat together the butter, sugars and yolk until light and fluffy.
- With the mixer on low, add flour mixture one cup at a time until completely combined.
- Form the dough into a ball, cover and refrigerate for one hour.
- In a small bowl combine the powdered sugar and Kool-aid to use for the topping.
- Preheat oven to 325° and line 2 baking sheet with parchment paper.
- Form dough into 1-inch balls and place on baking sheet 2-inches apart.
- Using even pressure gently flatten the balls of dough.
- Bake cookies for 12-14 mins or until the edges begin to brown.
- While hot, coat cookies, one at a time in the powdered sugar mixture, place on cooling rack.
- When cool, toss again in powdered sugar for a thicker coating.
