Caramelized Cumin Carrots
- 1 lb baby carrots
- 2 tbsp olive oil
- 1 ½ tsp cumin
- 2 tsp kosher salt
- Preheat oven to 400°F.
- In a large bowl, combine carrots, oil, cumin and salt, toss to coat.
- Spread carrots in a single layer on a baking sheet. Bake for 30 minutes or until tender, turning once while cooking.
