California Chicken Casserole (Feed 4 for $4.96)

This California Chicken casserole is a simple, delicious dish for under $5.00. It’s the perfect winter comfort food.

I’ve never been a real big fan of tuna noodle casserole, probably because my mom used to serve it a lot when we were young. When I became a mom I swore that I would never serve it to my kids.

Now that I’m a mom I understand why she served it so often. First off, I think it was the only casserole recipe that she had. Besides that, I think that it was a regular menu item because of how easy it was to make, didn’t take a lot of time, filled everyone’s bellies and was a pretty cheap recipe to prepare. I still don’t care for tuna casserole, but I do appreciate all of the benefits of a good casserole.

This California Chicken Casserole is my version of the casserole that my mom served. It’s easy, fast, filling and cheap just like hers, but I’ve swapped out a couple of the ingredients with some family favorites. Instead of using tuna I use chicken, instead of peas I use California medley and I replaced the potato chip topping with crushed Ritz crackers. Unlike the casserole that my mom served my family loves this casserole.

California Chicken Casserole
Back in the day tuna noodle casserole was a favorite cheap recipe to serve. While I still love a good tuna casserole, my family doesn’t. This is my twist on the classic recipe, using chicken instead of tuna and a California medley instead of peas.
Menu – Serves 4
Fruit Cocktail
6 oz
egg noodles, wide
Preheat oven to 375°
Cook noodles according to package directions. Drain
1 lb
1 tsp
chicken breast, cubed
olive oil
In a large skillet, cook chicken in oil until no longer pink. Drain.
½ cup
1 cup
dash
QuickMix
chicken broth
onion salt
In a small saucepan, stir together over medium heat, until it begins to bubble. Stir constantly until thick and smooth. Add to chicken.

carrot, sliced
broccoli, small florets
cauliflower, small florets
Add to the chicken and simmer until vegetables are slightly tender.
1 sleeve
Ritz crackers, crushed
Stir noodles into the chicken/vegetable mixture. Pour into a casserole dish and top with crackers. Bake for 20-30 minutes.
Serve with fruit cocktail.
