Grilled Chicken Salad (40g Protein)
4 c spring mix
1/2 c cherry tomatoes
1/2 cucumber
1/4 avocado
6oz grilled chicken breast
1 T olive oil
1 T lemon juice
1 t dijon mustard
1/2 t honey
salt and pepper
Season and grill the chicken until it reaches 165°F (75°C), then let it rest and slice. Whisk olive oil, lemon juice, Dijon mustard, and honey with salt and pepper for the vinaigrette. Arrange mixed greens, cherry tomatoes, cucumber, and avocado in a bowl, top with chicken, drizzle with dressing, and toss.

Grilled Chicken Wrap (48g Protein)

1 whole-wheat wrap (Carb ontrol – Aldi’s)
4 oz grilled chicken breast
1 tablespoon bacon
1 tablespoons hummus
1 tablespoon Parmesan cheese
1/4 avocado
Dijon mustard
2 lettuce leaves, chop
salt and pepper
Grill seasoned chicken until it reaches 165°F (75°C), then let it rest and slice into strips. Spread hummus on a whole-wheat wrap, add chicken and shredded lettuce, then fold in the sides and roll tightly. Slice in half if desired and serve.

Taco Salad
Calories: 510, Fat: 47, Carbs: 20g, Protein: 30g
2 c chopped lettuce
4 oz lean ground turkey
1 tbsp Taco seasoning
1/4 c salsa
2 chopped green onion
1 bag Quest Protein Chips (I used the taco-flavored ones)
¼ cup Mexican shredded cheese
1/2 avocado
In a large skillet, cook lean ground turkey until no longer pink. Drain excess juice from the pan. Add in taco seasoning and water, cook until sauce begins to thicken.
Add romaine lettuce to a large salad bowl.
Add shredded cheese and avocado
Crumble a bag of Quest Protein Chips and scatter over the top of your salad.
Top with salsa.
