Fresh, cleaned mushrooms, soak in 2 cups water and 1 tsp lemon juice for 5-10 minutes (this helps to retain the flavor when you freeze them). Put mushrooms into a food processor, process until they become like a paste. In a skillet melt butter (enough to cover the bottom of the pan) add mushroom paste, and salt and pepper to taste. cook the water out of the mushrooms, you want them to be slightly damp, but not dry. Spoon into ice trays, and freeze.
Use to make vegetarian tacos, it is easy to prep and makes use of food you might otherwise have thrown out.
