Corn Dog Pot Pie

Corn Dog Pot Pies – This simple, semi-homemade recipe of hot dogs hugged by a crispy corn meal shell, puts a delicious twist on one of the kids favorites, corn dogs. The surprise filling adds a delectable flavor that also keeps the dish from becoming dry, like traditional corn dogs. 

A simple and delicious twist to a favorite kids meal.Have you ever had one of those weeks when nothing goes the way you planned? I just had one of those weeks, total chaos, nothing that I planned turned out and I had a full calendar. This week I’m having to do double duty to make up for it. 

During all of the chaos last week I didn’t get a chance to go grocery shopping. Usually Sunday’s are the day, I sit down to plan our meals, go shopping and then prep the meals for the week. However last Sunday is when life began to get in the way of my plans.

My discombobulated schedule sent ripples through my whole routine. I love that word, discombobulate, it’s fun to say, discombobulate! Anyways, dinner time, is usually a pretty smooth part of my day because of the planning that I do, but last week smooth isn’t how I would describe it. I was a mommy without a plan and when dinner time rolled around I was at a loss.

Staring into my cupboards, trying to figure out what to make I came up with this simple Corn Dog Pot Pie. It’s amazing what we’re capable of in a pinch.

Ingredients Needed
4 cups chili
2 (8.5 oz) Jiffy corn muffin mix
2 eggs
1 (4 oz) can diced green chiles

1 (14.75 oz) cream corn
1 cup cheddar cheese, shredded
4 hot dogs
Tools Needed
4 6-inch pie plates
measuring cups
mixing bowl
can opener
knives
cutting board
baking sheet

Corn Dog Pot Pie

Normally when I share a recipe on Fluster Buster I take lots of pictures, showing the different steps to making the dish, but after the week I had I’m lucky enough to have these pictures. If you’re looking for step by step pictures, I’m sorry to disappoint you. Next time I make it, which I will because it was delicious, I’ll add the step by step pictures. You don’t really need them though because this is pretty simple to make. 

Step 1: Preheat oven to 350°F.

Add one cup of chili to each one of the four 6-inch pie pans. You could also use a casserole dish, but you might have to bake it a little longer.

Under normal circumstances I would have used my own chili recipe, however I used canned chili this time.

Step 2: In a large mixing bowl, combine the corn muffin mix, eggs, cream corn, green chiles, and cheese. Stir until the the corn meal is wet. Over stirring can make the corn bread tough.

Step 3: Top the chili with the corn muffin mixture. **If you have any left over mixture pour it into a muffin tin, it makes really good muffins.

Step 4: Top the pot pies with sliced hot dogs. Using your finger, give the hot dogs a little poke, so that they are being hugged by the corn muffin batter.

Step 5: Bake for 25-30 minutes. Bake until the tops are golden brown and a toothpick placed in the center comes out clean. Let them sit for 5 minutes before serving.

Ingredients

Instructions
  1. Preheat oven to 350°F.

  3. In a large mixing bowl, combine the corn muffin mix, eggs, cream corn, green chiles, and cheese. Stir until the the corn meal is wet. Pour the mixture over the chili.
  4. Top the pot pies with sliced hot dogs. Push the hot dogs slightly into the batter.
  5. Bake for 25-30 minutes. Bake until the tops are golden brown and toothpick placed in the center comes out clean. Let them sit for 5 minutes before serving.
Notes
You could also use a casserole dish, but you might have to bake it a little longer.
If you have any left over mixture pour it into a muffin tin, it makes really good muffins.

I’m so glad last week is over, it was one heck of a week. Hopefully, I can quickly catch up on all of the things that got put on the back burner. If I had to look for something good that came out of it all, it would have to be a couple of the simple recipes that I was forced to throw together.
