Garlic Hasselback Potatoes

Hasselback potatoes are a show-stopping side dish with their crisp, golden edges and tender, flavorful center. Simple to prepare, these potatoes are sliced into thin, fan-like layers that roast to perfection, making them as stunning to serve as they are delicious to eat.

Ingredients

  • 1 small Russet potato washed
  • 2 tablespoon butter melted
  • 1 clove garlic thinly sliced
  • salt

Instructions

  • Scrub clean, leaving the skin on. Use chopsticks or wooden spoons as a guide and slice into 1/8-inch cuts without cutting through.
  • Melt butter (or use olive oil) and brush generously over the potatoes. Gently fan out the slices to coat inside. Add thin garlic slices or garlic powder for extra flavor.
  • Preheat the air fryer to 375°F. Place potatoes in the basket with space between them. Cook for 25-30 minutes, brushing with more butter and sprinkling with salt halfway through
  • Once golden and crispy, remove from the air fryer. Let sit for 5 minutes, then add a final touch of salt. Garnish with parsley or parmesan if desired. Serve hot and enjoy!

**If you don't have a hasselback slicing rack, try placing the potato between the handles of two parallel wooden spoons. Then using a sharp knife slice 1/8 inch cuts into the potato. I like to tape the wooden spoons onto a cutting board so that they don't slide around when slicing the potato.
