Chorizo Cheese Ball

Ingredients

  • 8 ounces chorizo
  • 2 8 ounce packages cream cheese, softened
  • 2 cups sharp cheddar cheese
  • Pace® Picante
  • tortilla chips

Instructions

  • Cook chorizo until it starts to crumble, about 4-5 minutes. Drain on a paper towel and pat to remove as much grease as possible. Refrigerate until your ready to use it.
  • Using a mixer, whip the softened cream cheese, until it's light and fluffy.
  • Add the cheddar cheese and the chilled chorizo to the whipped cream cheese. Using a rubber spatula, gently mix together.
  • Form the mixture into a ball, cover with plastic wrap and refrigerate for at least 2 hours.
  • remove from refrigerator and scoop out the center with a small spoon. Fill with Pace® Picante (hot). Serve with tortilla chips.
