Creamy Mac & Cheese w/Sausage
Super creamy mac & cheese is so cheesy and delicious you'll never buy the boxed version again. It can be served as a side dish or add some smokie link sausage and serve it as a main dish. It's easy to make and a kid favorite which is why it made it to our list of #mommymeals.

- 1 package smokie links sliced
- 1/2 onion chopped
- 2 cups elbow macaroni
- 4 tablespoons butter
- 1 cup sharp cheddar cheese grated
- 1 1/2 cup Monterey Jack cheese grated
- 3 eggs beaten
- 1/2 cup sour cream
- 10.75 ounce can cheddar cheese condensed soup
- 1/2 teaspoon salt
- 1 cup half and half
- 1/2 teaspoon dry mustard
- 1/2 teaspoon pepper
- pinch of nutmeg
- additional cheese for topping optional
Preheat oven to 375°. Cook the macaroni according to package directions. While the macaroni's cooking sauté the onions and smoky links until the onions are translucent.
In a saucepan, over low heat, melt the butter, cheddar and Monterey Jack cheese.
Add the eggs, sour cream, cheddar cheese soup, half-and-half, and spices to the melted cheese. Stir well.
Add the sausage and onions to the cheese mixture and stir well.
Combine the macaroni and cheese sauce.
Pour the mixture into a casserole dish and top with cheese. Bake for 30 minutes.
