Ingredients

  • 1 cup BBQ sauce
  • 1 1/2 cup orange marmalade
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1/4 teaspoon ground ginger
  • 3 chicken breasts cubed
  • 2 large eggs beaten
  • 1 cup cornstarch
  • 1 cup vegetable oil
  • 4 green onions optional
  • sesame seeds optional

Instructions

  • In a small saucepan, over medium-low, combine BBQ sauce, orange marmalade, soy sauce, garlic and ginger. Simmer for 15 minutes. If you are serving the chicken with rice, now would be a good time to start it.
  • Heat the oil in a fry pan over medium heat. Once the oil is hot, dip the chicken into the beaten eggs.
  • Then working one at a time, dredge the chicken in cornstarch, pressing to coat.
  • Gently place the chicken in the hot oil, working in batches, fry until the chicken is golden brown. Drain on paper towel.
  • Toss the chicken with orange marinade. Serve over rice and top with green onions and sesame seed.
