- 1 cup BBQ sauce
- 1 1/2 cup orange marmalade
- 2 tablespoons soy sauce
- 2 cloves garlic minced
- 1/4 teaspoon ground ginger
- 3 chicken breasts cubed
- 2 large eggs beaten
- 1 cup cornstarch
- 1 cup vegetable oil
- 4 green onions optional
- sesame seeds optional
In a small saucepan, over medium-low, combine BBQ sauce, orange marmalade, soy sauce, garlic and ginger. Simmer for 15 minutes. If you are serving the chicken with rice, now would be a good time to start it.
Heat the oil in a fry pan over medium heat. Once the oil is hot, dip the chicken into the beaten eggs.
Then working one at a time, dredge the chicken in cornstarch, pressing to coat.
Gently place the chicken in the hot oil, working in batches, fry until the chicken is golden brown. Drain on paper towel.
Toss the chicken with orange marinade. Serve over rice and top with green onions and sesame seed.
