Refreshing Fruit Pizza

A crispy cookie crust, smothered with a creamy, fruity sauce and then topped with your favorite sliced fruit. Everything is chilled, then sliced and served as a delicious dessert or a semi-healthy snack.

Ingredients

  • 2 16.5oz refrigerated cookie dough
  • 1 pkg 8oz cream cheese, softened
  • 1 container 6oz raspberry yogurt
  • 3/4 cup powdered sugar
  • 2 teaspoons lemon juice
  • 8 ounces red raspberries
  • 8 ounces blackberries
  • 8 ounces blueberries
  • 1 can 20oz pineapple chunks, drained
  • 1/2 cup shredded coconut

Instructions

  • Preheat oven to 350°F.
  • Using your hands press the cookie dough into the bottom of an ungreased baking sheet. Score cookie dough with a knife, so the cookie will break apart easily.
  • Bake for 10-12 minutes or until the edges are light golden brown and the center is firm. Allow to cool completely.
  • In a medium bowl, mix together the cream cheese, yogurt, lemon juice and powdered sugar until it’s smooth.
  • Evenly spread the cream cheese mixture over the cooled cookie dough.
  • Top with sliced fruit and coconut. Refrigerate for 2 hours before serving.
