Refreshing Fruit Pizza
A crispy cookie crust, smothered with a creamy, fruity sauce and then topped with your favorite sliced fruit. Everything is chilled, then sliced and served as a delicious dessert or a semi-healthy snack.

- 2 16.5oz refrigerated cookie dough
- 1 pkg 8oz cream cheese, softened
- 1 container 6oz raspberry yogurt
- 3/4 cup powdered sugar
- 2 teaspoons lemon juice
- 8 ounces red raspberries
- 8 ounces blackberries
- 8 ounces blueberries
- 1 can 20oz pineapple chunks, drained
- 1/2 cup shredded coconut
Preheat oven to 350°F.
Using your hands press the cookie dough into the bottom of an ungreased baking sheet. Score cookie dough with a knife, so the cookie will break apart easily.
Bake for 10-12 minutes or until the edges are light golden brown and the center is firm. Allow to cool completely.
In a medium bowl, mix together the cream cheese, yogurt, lemon juice and powdered sugar until it’s smooth.
Evenly spread the cream cheese mixture over the cooled cookie dough.
Top with sliced fruit and coconut. Refrigerate for 2 hours before serving.
