Who doesn’t love breakfast for dinner? or Mexican food? This is one of our favorite cheap and easy recipes that combines two of our loves, breakfast and Mexican food. On nights when i just don’t want to spend a lot of time in the kitchen, Chorizo and Huevos Migar is one of the recipes that everybody loves and one that I can get on the table quickly.
Spanish Lesson
Chorizo [chuh-ree-zoh] – a Mexican, pork sausage seasoned with paprika, garlic and chilies. Can be found with other sausages in larger grocery stores.
Huevos [oo-ay’-vo] – eggs
Migar [me-gar’] – to break into small bits or pieces.
Now that we’re done with today’s Spanish lesson, let’s get to cookin’, I’m hungry.
Chorizo and Huevos Migar Dinner w/pinto beans and tortilla strips
Serves: 4 Category: Poultry/Eggs
1 15 ounce can pinto beans ($0.59)
6 corn tortillas, torn in pieces
($0.36)
1 tablespoons corn oil ($0.04)
Salt
3 medium potatoes, cubed ($0.20)
1 medium onion, chopped ($0.07)
8 eggs ($0.72)
5 ounces pork chorizo ($0.75)
½ cup Cheddar cheese ($0.38)
2 green onions, chopped ($0.10)
½ cup salsa ($0.42)
Instructions
1. In a nonstick skillet, brown cubed potatoes in corn oil.
2. While the potatoes are browning, warm the pinto beans in a small

and chopped onion. Cook over medium heat until the chorizo is cooked and the

5. Using a slotted spoon, move the chorizo and onion mixture to the

6. Using the same skillet, fry the torn pieces of corn tortillas in

7. While the tortillas are frying, whisk the eggs and set aside.
8. Remove the tortillas to a paper towel lined plate and lightly
sprinkle with salt.

9. Add the egg mixture and the potato and chorizo mixture to the
skillet. Cook until the eggs are set.

10. Top with cheese, salsa and green onions. Serve with pinto beans and

- Cheddar Cheese – (8 ounces for $1.50) purchased from a discount grocery store.
- Green Onions – (1 bunch for $.49) purchased from the farmer’s market. One bunch contains 8-10 green onions.
- Salsa – (16 ounces for $1.69) purchased from a discount grocery store.
Savings Tip
Potatoes are usually at their cheapest during the winter months. When you find a good sale, stock up. Potatoes have a long storage life if you store them properly. Here are some tips on storing potatoes:
- Remove any potatoes that have broken skins, these are not good to store.
- Layer your potatoes in ventilated containers, like crates or baskets. Place newspaper between each layer.
- Potatoes need to be stored in temperatures between 35-40 degrees, a basement or root cellar is ideal.
- Check your stored potatoes for any that might be going bad. This should be done every few weeks. One bad potato can destroy all of the potatoes around it.
