Ingredients

  • 1 tablespoon cornstarch
  • 1/2 cup water plus 2 tablespoons
  • 1 1/2 cups blueberries fresh or frozen
  • 1/4 cup sugar
  • 1/4 teaspoon lemon juice

Instructions

  • In a small bowl, mix together the cornstarch and a 2 tablespoons of water, set aside.
  • Place 1 cup blueberries into a small saucepan, add remaining water, sugar and lemon juice. Heat over medium heat until the mixture comes to a boil and blueberries begin to burst.
  • Stir in the dissolved cornstarch and bring to a rolling boil. Lower the heat, add remaining blueberries and simmer until the sauce reaches the desired consistency. Remove from heat and serve.
