Easy Potato Salad

- 4 medium potatoes cut into 3/4" pieces
- 3/4 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 onion diced
- 1 stalk celery diced
- 3 hard boiled eggs chopped
- paprika
In a large pot, add potatoes and enough water to cover. Over medium-high heat, bring to a boil, reduce heat and simmer until potatoes are tender, about 10 minutes. Drain and transfer to a large mixing bowl and allow to completely cool.
In a small mixing bowl, whisk together mayonnaise, mustard, garlic powder. salt and pepper.
To the cooled bowl of potatoes, stir in the mayonnaise dressing. Fold in onion, celery and eggs.
Garnish with paprika
