Ingredients

  • 2 tablespoons oil
  • 1 pound boneless skinless chicken breasts cut into 1/2" strips
  • 1 medium onion cut into strips
  • 1 bell pepper cut into strips
  • 1 can Rotel tomatoes with green chilies drained
  • 1 package fajita seasoning
  • 8 flour tortillas

Instructions

  • Heat 1 tablespoon oil in a cast iron skillet over medium-high heat. Add chicken and cook until no longer pink. Remove from skillet.
  • Using the same skillet heat the remaining oil over medium-high heat. Add the onion and peppers, cook until they begin to soften, about 3-5 minutes.
  • Return the chicken to the skillet, add the tomatoes and fajita seasoning. Continue cooking until the chicken is cooked through, about 3-5 minutes.
  • Spoon the mixture into heated tortillas

Notes

Top with:
avocado, lettuce, shredded cheese, salsa, sour cream, tomatoes
Serve with:
pinto beans, black beans, refried beans, Spanish rice, elote
