- 2 tablespoons oil
- 1 pound boneless skinless chicken breasts cut into 1/2" strips
- 1 medium onion cut into strips
- 1 bell pepper cut into strips
- 1 can Rotel tomatoes with green chilies drained
- 1 package fajita seasoning
- 8 flour tortillas
Heat 1 tablespoon oil in a cast iron skillet over medium-high heat. Add chicken and cook until no longer pink. Remove from skillet.
Using the same skillet heat the remaining oil over medium-high heat. Add the onion and peppers, cook until they begin to soften, about 3-5 minutes.
Return the chicken to the skillet, add the tomatoes and fajita seasoning. Continue cooking until the chicken is cooked through, about 3-5 minutes.
Spoon the mixture into heated tortillas
