Healthy Simple Italian Summer Squash Casserole

A simple, healthy Italian dish that can be served as either a main dish or a side dish. It has all of the flavors that you expect from an Italian dish, minus all of the calories.

Ingredients

  • 2 cups zucchini sliced 1/4"
  • 2 cups yellow squash sliced 1/4"
  • 1 medium onion sliced 1/4"
  • salt
  • 3 cups marinara sauce
  • 1 cup mozzarella cheese

Instructions

  • Preheat oven to 350°.
  • To remove excess moisture, place squash and onions on layers of paper towel, sprinkle with salt and cover with a few more layers of paper towel. Allow the paper towel absorb the moisture for 5-10 minutes.
  • Place squash and onion in a 9x9" baking dish, pour marinara sauce over the top and cover with tin foil. Bake for 20 minutes
  • Remove foil, add cheese and bake an additional 10 minutes.
  • Remove from oven and allow to sit uncovered for 5 minutes before serving

Notes

To remove moisture: Place cut squash on a layer of paper towels and sprinkle with salt. Let the zucchini rest for a few minutes before cooking.
