Ingredients

  • cooking spray
  • 1 cup sugar
  • 3/4 cup apple sauce unsweetened
  • 1 package 3 ounces Jell-O
  • 1 envelope .25 ounces unflavored gelatin
  • 1 teaspoon lemon juice
  • 1 cup granulated sugar for coating

Instructions

  • Spray an 8x8 glass baking dish with cooking spray, place in refrigerator until it's time to use it.
  • In a saucepan, over medium-high heat, add the sugar, unsweetened applesauce, Jell-O, unflavored gelatin and the lemon juice. Bring to a boil and allow to boil for 1 minute, stirring constantly.
  • Remove from heat and pour the hot mixtures into the cooled baking dish. Refrigerate for 2-3 hours or until firm.
  • Sprinkle a baking sheet with sugar and turn the firmed mixture out onto the baking sheet. Cut the mixture into shapes using small cookie cutters or use a knife to cut into small squares.
  • Lay them out on a lined baking sheet and allow to air dry overnight. The next morning roll the gumdrops in sugar making sure that they are heavily coated.
