Simple 20-Minute Beef Broccoli Bowls

Ingredients

  • 2 cups instant rice cooked
  • 3/4 cup soy sauce
  • 1/2 cup chicken stock
  • 1/3 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • pinch red pepper flakes
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1 pound flank steak
  • 1 head broccoli cut into florets, steamed

Instructions

  • Cook rice according to package instructions.
  • Bring an inch of water to a boil in a pot, then place cleaned broccoli in a steamer basket over the water. Cover and steam for 5-7 minutes until tender yet crisp. Set aside
  • In a saucepan, whisk together soy sauce, stock, honey, vinegar, sesame oil, brown sugar, garlic, ginger and pepper flakes. Bring to a boil.
  • In a small bowl whisk together cornstarch and water. Slowly whisk into the boiling sauce. Continue to whisk until it begins to boil. Turn down heat, and simmer until thick.
  • In a large skillet, heat olive oil over medium-high heat. Add steak, cook for 1-2 minutes, turn over and cook for an additional 1-2 minutes.
  • Toss the beef and broccoli with the sauce.
  • Assemble bowl, rice topped with the beef broccoli mixture.

Notes

Double the sauce ingredients if you prefer a saucier beef broccoli bowl.
