15 Minute Shrimp & Asparagus Pasta

Tender pasta, asparagus, and jumbo shrimp tossed in a parmesan, garlic, butter sauces. The whole dish comes together in less than 15-minutes.

Ingredients

  • 12 ounces angel hair pasta
  • 1 1/2 sticks butter
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 2 cups sweet peppers diced
  • 15 spears asparagus diced
  • 1 pound cooked shrimp large (31/35)
  • 1 cup parmesan cheese shredded

Instructions

  • Cook pasta according to package directions. While the pasta is cooking, melt butter in large skillet over medium heat.
  • Once the butter is melted stir in the minced garlic, cook it for about 30 seconds to a minute. This will release the fragrance of the garlic for the butter sauce.
  • Over medium heat, add the onion, sweet peppers and the asparagus to the garlic butter sauce; cover and cook for 5 minutes, stirring occasionally.  The asparagus will be slightly tender after 5 minutes, if you prefer your asparagus well done, cook for an additional 5-10 minutes.
  • Add the cooked shrimp to the pan, and cook for about 2-3 minutes.
  • Toss the pasta in with the buttered vegetables, continue tossing until completely coated with the butter sauce. Sprinkle with Parmesan cheese and toss again.
