- 12 ounces angel hair pasta
- 1 1/2 sticks butter
- 4 cloves garlic minced
- 1 medium onion diced
- 2 cups sweet peppers diced
- 15 spears asparagus diced
- 1 pound cooked shrimp large (31/35)
- 1 cup parmesan cheese shredded
Cook pasta according to package directions. While the pasta is cooking, melt butter in large skillet over medium heat.
Once the butter is melted stir in the minced garlic, cook it for about 30 seconds to a minute. This will release the fragrance of the garlic for the butter sauce.
Over medium heat, add the onion, sweet peppers and the asparagus to the garlic butter sauce; cover and cook for 5 minutes, stirring occasionally. The asparagus will be slightly tender after 5 minutes, if you prefer your asparagus well done, cook for an additional 5-10 minutes. Add the cooked shrimp to the pan, and cook for about 2-3 minutes.
Toss the pasta in with the buttered vegetables, continue tossing until completely coated with the butter sauce. Sprinkle with Parmesan cheese and toss again.
