I love soup, especially cream based ones, there’s something very comforting about eating a nice, hot bowl soup. One of the things that I look forward to when Fall roles around is adding soup to our weekly menus. Although Fall hasn’t hit quite yet I had a craving for a big bowl of Clam Chowder last week. It wasn’t on our menu but luckily I had all of the ingredients needed to comfort my craving.
What is a bowl of soup without a nice partner? Grilled Cheese sandwiches always pair well with soup and when you add a little avocado and tomato it makes their partnership even tastier.
Clam Chowder w/grilled cheese sandwiches
Serves: 4

3 slices bacon, chopped ·
6½ ounces minced clams, reserve liquid ·
1 medium onion, chopped ·
3 medium potatoes, diced ·
1 cup boiling water ·
Salt and pepper, to taste ·
2 cups milk ·
5 tablespoons butter ·
8 slices bread ·
4 ounces cheese Instructions
Cook
bacon pieces in a fry pan until crisp. Add onions and cook until tender. Add clams, reserved liquid, boiling water, potatoes, salt and pepper. Cover and cook on low for 15-20 minutes or until the potatoes are fork tender. Stir in milk and butter. Cook until heated. Heat
skillet over medium heat. While the pan is heating, butter the outside of each slice of bread. Place one slice of bread, butter side down in the hot skillet. Place cheese on the bread in the skillet and top with a slice of bread, butter side up. When the bread has browned, flip and brown the other side. |
