Caramelized Cumin Carrots

  • 1 pound baby carrots
  • 2 tablespoon olive oil
  • 1½ teaspoons cumin
  • 2 teaspoons kosher salt
  1. Preheat oven to 400°F.
  2. In a large bowl, combine carrots, oil, cumin and salt, toss to coat.
  3. Spread carrots in a single layer on a baking sheet. Bake for 30 minutes or until tender, turning once while cooking.
