Cilantro Lime Rice

  • 1½ cup white rice
  • 3 cup chicken stock
  • ½ cup cilantro, rough chop
  • 2 tablespoons lime juice
  • 1 clove garlic
  • ½ teaspoon salt
  • 2 tablespoons olive oil
  1. Cook rice according to package directions, using chicken stock instead of water.
  2. In a food processor, blend together cilantro, lime juice, garlic, salt and olive oil.
  3. Stir cilantro mixture into the cooked rice and serve.
