Scrumptious Chocolate Cherry Refrigerator Cake

Ingredients
  • ¾ cup (5 ounces) milk chocolate chips
  • ¾ cup (5 ounces) semi sweet chocolate chips
  • ½ cup light corn syrup
  • ½ cup (1 stick) unsalted butter, room temperature
  • 9 chocolate graham crackers, broke into small pieces
  • 1 cup (8 ounces) candied cherries & pineapple
  • ⅓ cup walnut, chopped
  • cocoa powder (optional)
Instructions
  1. Line an 8x4 loaf pan with plastic wrap, draping extra over the sides.
  2. Using a *double boiler, melt chocolate, butter and syrup over a pan of boiling water, stirring occasionally.
  3. Remove the pan of melted chocolate and stir in the graham crackers and cherries.
  4. Pour the chocolate mixture into the loaf pan and firmly pack in down.
  5. Allow it to cool before refrigerating 2-3 hours.
  6. Remove from pan, dust with cocoa powder before serving.
Notes
*Double Boiler (option) - Use a standard sauce pan for the bottom, and a slightly smaller pan, or bowl for the top. The top pan should fit snug into the bottom pot with out touching the bottom.
